How do I add an address to my Goggle contacts that has an underscore
within it?  I have even attempted to copy and paste but it does not
work that way either.  Please assist.

I cannot replicate this error: I can add addresses with the underscore
without a problem.

Clear the cache and try again, or try a different browser, you can
switch to the older version and try it there. Check back here if you
still can't add the address.
