The short answers:
1. You must use 'recent mode' if you want to be able to perform a
delayed delete on Gmail' POP server.

2. To delete a message from Gmail through the IMAP server, move it to
[Gmail]/Trash.

  2a. You can map the Thunderbird Trash folder to [Gmail]/Trash.
