Just got a new iPhone, w00t!

I used the "gmail" account type to set up my personal account.

I want to configure gmail to archive messages when I click the "trash"
icon.

According to this page, I should set the trash folder to my iPhone
local "Trash"

Specifically: "Do NOT save deleted messages on the server. Messages
that are deleted from an IMAP folder (except for those in [Gmail]/Spam
or [Gmail]/Trash) only have that label removed and still exist in All
Mail. Hence, your client doesn't need to store an extra copy of a
deleted message."

however when I use this configuration, messages are moved to the Trash
in my gmail account (and no longer appear in all mail)

Since the proposed settings don't work, I am changing the trash
setting to use the "All Mail" folder to try to resolve this.  Should I
expect any problems?

It depends. If you try to empty the "trash" while it is pointed at All
Mail, it could be bad.
Did you try the instructions here:
http://mail.google.com/support/bin/answer.py?answer=77702

Specifically, do not let the iPhone set up the account automatically.
