The alt+s displays the "ś" letter when I use the Polish keyboard
option in winXP, but it does not work inside Gmail.  Is this keyboard
shortcut assigned to another function?  Can I disactivate the shortcut
to enable the Polish letter "ś" within Gmail?

It doesn't seem to have a keyboard command associated with it:

Are you sure it is <Alt>+<s>? Try <AltGr>+<s>
